Résumé: The paper presents the state of art on the present knowledge on the subject at a European scale. Then the author centers the attention to the salt production during Neolithic and Calcolithic, with an especial emphasis on different types of evidences (ceramic dumps, structures, charcoals, mining tools...), production techniques and systems of production control. Once it has been established how these productions are linked to particular social contexts, the study reveals how salt, or better the salt loaf, does not really play just an alimentary role, but it appears as a high value product for exchange, as well as a way to accumulate richness by storing salt.
